We spent most of last week recovering from Hurricane Beryl here in Houston. Luckily we had a backup generator. After we got the power back, we had some chances to enjoy good wine.

This wine is a great example of being patient if you open a wine (especially red) that seems mediocre at first. Put a stopper or re-cork it and try a glass in a day or two in the wine fridge. The oxygen can transform the wine but the wine fridge prevents this from happening too fast.

Recommended Pairing: Chicken Madras (turn down the heat)
My wife doesn't like the petrol / diesel smells that classic Riesling from Germany or Alsace often carries, but this Finger Lakes, NY region wine is fantastic. Many Americans assume Riesling is only sweet as that's the only type available in most grocery stores. It's best bone dry, in my opinion, though the sweeter versions are excellent with a lot of bottle age.

Recommended Pairing: Raw Oysters with Mignonette Sauce
Chablis is delicious by itself but it has been a while since I've enjoyed it with oysters, well known as a classic pairing.

It apparently doesn't age well or perhaps the cellaring conditions weren't ideal on the 2013 but this younger wine was much better. The 14.5% ABV was too hot (boozy) though. It was a lovely visit to the Atavus winery during Spring Break but I look forward to their orange wine and classic Priorat reds. Somehow the whites seemed to drink better at the tasting.
